mine get bitter when they are picked too soon or overripe.

Try an old farmers trick, cut off the ends of the cuke you are about to use and rub the opposite ends on the cuke. . . you will get a jell-like substance , wash it off and the cuke should not be bitter any more.

There is a substance in them that is bitter, more in some varieties than others. The nice thing is, the less bitter ones are less attractive to bugs! Read some seed catalogs. They usually say which ones are not bitter. I think too little water may contribute to the bitterness, but I’m not sure.
